Pork quesadillas with Guacamole

Recipe details below, but the lovely Claire (her left hand seen in this image) brought some Carolina’s tortillas home from Phoenix this week, so we had quesadillas for lunch today. Crazy good!

The tomatoes in the photo are named “orange bananas.” We didn’t end up using those, and switched to some beef steaks after I took the picture. The orange bananas were a little too sweet, so we saved those for salad tonight.

Quesadilla filling:

Left over pork, cut into strips
black beans
onions
green chili
garlic

Guacamole:

onions
avocado
garlic powder
salt
lime juice
cilantro
tomatoes
