Peach pie

Crust:

2.5 cups white flour
2.5 tablespoons sugar
1/2 teaspoon salt
2 sticks butter cut into very small pieces, blended until the whole mix looks granular, then mix in 6 tablespoons very cold water. Dust with whole wheat flour and roll flat in two pieces, one for top, one for bottom. Cut into strips for the top if you’re ambitious.

Pie filling:

Six cups late season New Hampshire peaches
1/4 cup flour
1/2 cup sugar
pinch of salt
dust the whole mix with nutmeg
3 tablespoons diced butter

Bake at 425 for 30 minutes. Place a rim of foil around pie to protect outer crust, and continue to bake about 20 minutes more at 325 or until bubbly.

Crazy good!
